Look how I slay in the kitchen once again with my new peanut banana bread topped with peanut coconut streusel, trust me it’s one of a kind! I’m excited about this recipe for two reasons, my kids literally drool when they smell this bread baking and I still can’t figure out which ingredient is most responsible for the delicious taste of this breakfast snack. 4 ripe bananas
2 cups of flour
1/2 cup brown sugar
1/2 cup of coconut oil
1 1/2 cups of peanut powder (it doesn’t have to be well grounded)
1/2 tsp of salt
1 tsp of pumpkin spice
1 tsp of baking powder
2 tsp of vanilla
2 tbs of cold butter
1 tbs of brown sugar
1/2 cup of grounded unsweetened coconut flakes
1/2 cup peanut powder
Separate the egg whites from the yolks.
Beat the egg whites to stiff peak.
Grind the peanuts to almost powder.
Mash the banana.
Now mix all the ingredients together except the beaten egg whites.
Now gradually fold in the egg whites to the mixture until well incorporated.
Pour into a loaf pan.
Now the mix toppings together and sprinkle on top the batter.
Bake in 350 degrees F oven for 1 hour or until the tooth pick come out clean.
