INTRODUCTION
Back home, my Mum used to prepare pumpkin for us, but she makes it just one way, she boils it until it’s cooked and served with Palm oil and onion relish…how delicious! Good thing I got exposed to other cuisines which opened my ever adventurous foodie mind to the fact that there is more to pumpkin than I know. I also found out that baked pumpkin is way better than boiled pumpkin because when pumpkin is boiled, it loses a lot of its sweetness but when baked, it’s much better, it’s sweetness is more concentrated and the taste is indeed great.
To make pumpkin purée, you need: pumpkin, oven, baking tray and blender.
DIRECTIONS
Preheat the oven at 350 degrees F.
Put the cleaned pumpkin in a baking tray with the skin placed side up.
Put in the oven and bake for an hour.
Get it out and let it cool.
Blend until well smoothened.
After this you can store in a fridge or refrigerator and use for all manner of sweet and savory dishes; also you can make unique drinks and cocktails with it too.
