OVEN COOKED COUSCOUS AND FISH

This is a new recipe that you gonna love. Couscous is a super quick, easy to prepare, less expensive and a healthy alternative to pasta and rice. Couscous serves beautifully as a main dish or as a side. It can also be made locally with a Nigerian food popularly known as Acha. My oven cooked couscous is both filling and nutritious.

INGREDIENTS

1 King fish steak

1 cup of couscous

1 & 1/4 cups of water (or any kind of stock)

3 Springs of Green onions (chopped)

1/4 cup of Green beans (chopped)

1/4 cup of Red bell pepper ( chopped)

1/2 tsp of Black pepper

Knorr powder

1 tsp of cayenne pepper

Salt to taste

Spices of your choice

DIRECTIONS

Season the fish with salt and black pepper.

Pre heat the oven to 375 degrees  F.

In a casserole dish, add the water or stock.

Add the Knorr and salt (the taste of the liquid will determine how tasty the whole dish will be, so pay attention at this point)

Add the spices.

Add the couscous.

Add all the chopped veggies.

Place the fish in the middle of the dish.

Stir and cover the dish.

Place in the oven for 20 – 25 minutes
