This is quick and easy to follow omelette recipe customized with plantains which offers endless mealtime possibilities (perfect for breakfast, lunch or dinner). It’s a combination of all the things we liked to eat during school days in campus and still crave for them. So I thought to put everything in one dish, POW! That’s how this recipe came about. Learn this to make a perfect omelette for yourself, it’s healthy and hearty and the best way to say “goodmorning…”
1 large ripe plantain (peeled and chopped)
3 tbs of oil
1/2 medium size onions
1 tin of sardines
1 tbs of dried scent leaves (nchuanwu)
1 tbs Green onions (for garnish)
1 tbs Red bell pepper (for garnish)
Heat the oil in a pan.
Add the plantains.
Sprinkle salt and black pepper and stir.
When the plantain starts to turn brown, add the sardines (drain out some of the oil from the sardine tin and remain a little).
Add dried Scent leaves (if you have the fresh one you can also add it at this point).
Whisk the eggs with a pinch of salt and pour over the food.
Lower the heat to the lowest and cover the pan. This will allow eggs to cook and set.
Turn off the heat
Garnish with green onions and red bell peppers
Serve and eat as breakfast or put in a wrap for lunch or dinner.
