Our plantain recipe is actually the first of its kind on the blog, we haven’t tried our magic with plantain until this tasty, easy, make and take. This is not just so easy, it’s healthy and delicious. It is gluten free and dairy free. This is “the waffle recipe” that you want to keep in your family for a long time. My kids enjoyed it my husband loves it. You wanna know how easy, It requires only four ingredients.
2 large ripe plantains
1 tsp of baking powder
A pinch of salt
Wash, peel and slice the plantains.
In a food processor, add the plantains and blend until smooth.
Add the egg, baking powder, and salt; blend. At this point you will see as it blends, it incorporates air into the batter and doubles in size.
Scoop into a hot waffle maker.
Cover and let it cook.
Best served with the classic Nigerian Egg Omelette.
