2 1/2 cups of flour
3 Tbs of sugar
1 Tsp of salt
1 Tsp of baking powder
2 1/2 cups of milk
3 eggs (separated, that means separating the whites from the yolks)

In a bowl, add all the dry ingredients.
Add the yolks of the egg.
Add the milk and mix the batter until all is properly stirred.
Beat the egg whites until stiff peaks.
Fold it in gradually to the batter.
Let it sit for at least 15 minutes.
Heat the griddle/ pan/ whichever you have.
Smear butter or I cannot believe it’s not butter on the griddle.
Pour the batter on the hot griddle, then sprinkle the toppings.
Let it cook until you see air openings on top the batter; it’s time to flip on the other side for 30 seconds.
Then serve hot with your favorite sauce or syrup.
