Sausage Stew

SAUSAGE STEW

For this recipe you will notice I did not use any seasoning at all. It is unbelievable how much flavor that is packed in a sausage. Note in this recipe I used ordinary sausage and not Italian. This recipe is all about fresh ingredients and sausage and, I served it with boiled white yam. Delicious!

Ingredients

1tbs of olive oil

2 large tomatoes

1 large red peppers

2 cloves of garlic

1 hot pepper

A handful of fresh basil

1 pound sausage

Directions

STEP 1

In a cast iron skillet pour and heat the olive oil

Add the sausage and let it boil until it turns brown and crisps up. Stirring occasionally

STEP 2

While the sausage is boiling and crisping up

In a food processor blend the peppers, garlic, tomatoes and basil until smooth with little specks of green from the basil

Pour it into the browned and crisped up sausage

Let it boil until the sauce is well reduced and you can see the oil floating on top of the sauce

FINALLY

Stir and turn off the heat

Serve with boiled white yam.
