Baked Peaches Topped With Gluten Free Streusel

baked peaches

This is Bobby Flay’s my favorite food network star inspired dish. It can be served as breakfast or as a dessert. The key thing here is that fruit should be ripe and sweet. If it is a little sour sprinkle a little sugar or sweetener on top of to help bring out its sweet fruit goodness. Now, this is gluten free because I substituted ordinary flour with coconut flour and it turned out not just gluten free but fun and flavorful. My picky son who likes anything that has chocolate inspired me to add chocolate chips in it and it even made it better. You can serve as it is or with ice ice cream.

3 sweet peaches

1/2 cup of oats

1/2 cup of coconut flour

1/4 cup of butter (room temperature)

2 tbs of coconut oil

1/4 cup of sugar

1/4 cup of milk chocolate chips

Pinch of salt

Wash and pat dry the peaches

Cut the peaches in half, take out the seeds and place facing up in a baking dish

In a mixing bowl mix butter, oats, coconut flour, sugar, salt, coconut oil, chocolate chips, and vanilla until well incorporated

Scoop the mixture on the peaches

Put in a 350 degrees oven and bake for 35 minutes or the topping has browned

Serve cooled with an ice cream or as it is
