Noodles Saute In Carrots And Roasted Chicken Drippings Sauce

NOODLES SAUTÉ IN CARROTS AND ROASTED CHICKEN DRIPPINGS SAUCE

How did I create this recipe? You know that moment in your life when your body is craving noodles without heavy sauce but with something light and simple; you already have drippings from roasting the chicken which of course is packed with flavor, but you are not sure what to do with it. Combining noodle and the drippings will not feel like a real nutritious meal, so to add color which it obviously needed; I used carrot because though the taste is sweet, it is also subtle and always goes well with chicken. Finally I added basil leaves to compliment the color and  for extra flavor.

Ingredients

Egg noodles

5 medium sized carrots (julienned)

1/2 of medium sized red onions (sliced)

5 tbs of olive oil

1clove of garlic (chopped)

Chicken drippings (from roasting the chicken)

Fresh basil

Salt and black pepper to taste

Directions

Cook the noodles according to manufacturer’s instruction and set aside

In a skillet, heat the oil and add the onions; stir until it is translucent

Add the carrots, stir until heated through

Add the noodles

Add the chicken drippings and toss until well incorporated

Add salt and black pepper to taste

Turn off the heat and add the basil

Serve warm with the roasted chicken
