Stuffed Potato With Creamy Tomatoes and Kilishi Sauce

STUFFED POTATO WITH CREAMY TOMATOES AND KILISHI SAUCE

A ‘9ja’ spin to stuffed potatoes. The outcome very soothing and comforting; the taste so delicious. My husband loved it

INGREDIENTS

6 large potatoes

Olive oil

2 cloves of garlic

1 bunch of green onions

8 firm fresh riped tomatoes

1cup of evaporated milk

3/4 cup of Parmesan cheese

Kilishi (chopped)

DIRECTIONS

Heat the oven to 450 degrees

Wash and dry the potatoes

Wrap them individually in foil and put in the oven to bake for 45 minutes

While the potatoes are baking, you prepare the sauce

In a skillet, heat the oil and add the kilishi, sauté to release some of it’s flavor

Add the white part of the green onions( chopped) and the garlic, then stir

Add the diced tomatoes; because you don’t want it to release it’s juice yet, stir it for a littlewhile

Add the milk and allow it to heat but not to boil; reduce the heat

Add the Parmesan cheese and stir, it will help to thicken the sauce

Add some of the green part of the green onions (diced) and turn off the heat

To serve, make an incision on potatoes and spoon in the sauce inside it.

Then garnish with green onions
