Ugba Served With White Yam

Ugba - 300 x 400

This is a perfect delicacy for Saturday lunch


2 cups of ugba

ΒΌ cup of palm oil

Β½ cups of Cray fish

3 locust beans (eruru)

1 okra (boiled)

Hot pepper (optional)

Potash (pinky fingernail size) (optional)

Β½ cube of maggi

Warm water (just enough to make the mixture saucy)

Utazi or baby spinach- whichever you have available



In a mortar grind the pepper, crayfish, eruru with a pestle until it is a smooth paste

Add okra, maggi and the potash to paste and grind

Add the palm oil and stir with the pestle

Add the water and stir

Add in the ugba and baby spinach, this time stir with a spoon

Season with salt

Serve with white yam
