Meatballs & Penne Pasta In Pumpkin Sauce

Spring has sprung, I was going through my pantry and I found a big can of pumpkin puree that I had bought during the winter. I decided to use it up before it expires to make dinner and that’s how I came up with the meatballs and penne pasta in pumpkin sauce and it turned out quite palatable. I could not wait to share with you folks.

INGREDIENTS

1 packet Penne pasta

½ pound ground turkey

½ pound sausage

8 slices of bacon (finely chopped)

1 cup of pumpkin puree

2 cloves of garlic

1 tbs of oregano

¼ cup of Olive oil

Maggi

Hot pepper (optional)

Reserved from cooking the pasta

Salt

DIRECTIONS

Cook the pasta according to the manufacturer’s instructions and reserve some of the water

FOR THE MEATBALLS

Combine the ground turkey, sausage, and bacon, mix properly and form small balls with it

Heat the oil and then fry the meatballs.

FOR THE PUMPKIN SAUCE

In the same oil while still hot add chopped garlic and ½ of the oregano to sizzle and to release its aroma

Add the pumpkin. Allow it to boil for like 10 minutes

Add the pepper, magi, the reserved pasta water and the meatballs; bring it p to a boil

FINALLY

Add the pasta, toss and turn to make sure it is well coated with sauce

Season with salt

Add the remaining oregano
