Egg Stew

EGG STEW
This is one of my favorite dishes to prepare when I don’t have much time on my hand. It is very simple yet very delicious and can compliment a variety of meals. It can be eaten together with boiled yam, oven fried plantain, potatoes, even bread as a sandwich. It requires three main ingredients; eggs, tomatoes, onions
INGREDIENTS
4 ripe tomatoes (diced)
Β½ medium sized onions (diced)
2 tbs of olive oil
1 tsp thyme
3 eggs
2 tbs of milk
Β½ cube of maggi
Basil or parsley for garnish

DIRECTIONS
Heat the oil in a skillet
Add thyme to toast for a little bit and to release its aroma
Add the onions and tomatoes and cook until it starts changing color
Add maggi
Beat the eggs together with the milk, season with salt and add
Turn the heat down, cover and let the eggs to set; flip it over
Garnish to taste with basil or parsley.
