OKPA – BAMBARA GROUNDNUT (VIGNA SUBTERREAN)

This is a kind of legume. It can be boiled and roasted; eaten as a snack. Also it can be milled into flour which is cooked to what we Igbo’s call OKPA. It is a very simple dish but very delicious.

INGREDIENTS

3 cups of okpa flour

ΒΌ cup of palm oil or if you have the fruit paste

6 cups of warm water

Salt

1 minced hot pepper (optional)

DIRECTIONS:

Put the flour in a bowl and pour about 2 cups of the warm water, use a whisker to stir until it form a smooth paste

Add the oil, pepper and stir until when combined

Add the remaining 4 cups of water and stir

Add salt to taste

Scoop into foil wrap, banana leaves or whatever you have and put in a pot

Pour water into the pot until half way and cover tightly

Cover and cook for 45 minutes
