Plantain is one of the delicacies we have in our house growing up, It can be fried, roasted whole or boiled. I discovered a new way to cut down on fat and calories for fried plantain that I really really love is by slicing them the normal way, then roast them in the oven. And trust me it’s so easy anyone can make it; it can be prepared at any time of the day. Most people use as a breakfast with tomato sauce; other as a side dish. I think it compliments any dish you can think of.
3 Ripe plantains
Dried herbs; it could thyme, oregano whatever flavor you are feeling that day
Heat the oven using the roast button at 400 degrees F
Slice the plantain thick and put in a bowl, splash a couple oil to coat, add the seasonings and toss for everything to be well incorporated.
Spray your baking sheet lined with foil with cooking spray
Dump the plantain into baking sheet and spread out on a single layer so that it will brown and crisp at the edges
Bake or roast until slightly browned and cook
And serve; it could be with rice dish, or as a breakfast with egg stew
